Ingredients, Serves 4:
- 1 cup diced tomatoes
- 1 cup diced yellow pepper
- 1 cup diced red pepper
- 1 cup diced English cucumber
- 1/2 cup diced red onions
- 1/2 cup thinly sliced basil
- 1/4 cup red wine vinegar
- 1/4 cup extra virgin olive oil
- 1 teaspoon dry mustard
- 1 teaspoon cayenne pepper
- 1 teaspoon salt
Mix the veggies and basil together in a bowl and salt to taste. Then mix the vinegar, EVO, mustard, pepper together and pour over the veggies. Toss and serve! Pretty simple, but fantastic result!
